Gluten And Dairy Free Peanut Butter Chocolate Chip Cookies

These are the easiest quickest cookies to make, the worst part of  getting this post up was taking the pictures and not being able to eat the cookies until I had a few good shots, the first mediocre picture and I was diving in.

Just a note you can easily use less maple syrup or honey, this is just a guide it's best to add a tablespoon and a time and give it a taste if you don't like it too sweet. Also it is preferable to use organic peanut butter.

For 12 Cookies
3/4 Cup Peanut Butter (Natural, No Sugar or Oil Added)
1 Egg
4 Tablespoons Maple Syrup ( you could also use honey)
1/2 Teaspoon Baking Soda
1/3 Cup Dark Mini Chocolate Chips

Preheat the oven to 350 and line a cookie sheet with parchment paper

In a bowl combine all your ingredients except the chocolate chips and whisk till well combined

                                                        Fold in the chocolate chips

Scoop out a tablespoon of batter and roll into balls

With the back of a spoon or spachler press the cookies down around and Inch and half

Pop into the oven for 10 min , take them out on a wire rack to cool slightly.
